Taurasi DOCG \u201cSanta Vara\u201d: why we like it<\/h2>\n

This Taurasi DOCG “Santa Vara”, produced by the La Molara winery, is an expression of the beauty and versatility of the Aglianico grapes exalted to the max with the expression of “Santa Vara”, showing the very high quality of this vine. It is obtained from a scrupulous selection of pure Aglianico grapes from the vineyards owned by the winery located in the municipality of Luogosano, particularly suited to the production of the Taurasi DOCG wine, at an altitude of 400 meters above sea level, and characterized by a clayey-limestone soil type . The vineyard is cultivated with a density of 6000 vines per hectare and a production of 70 quintals of grapes from which 45 hl of wine derive.<\/p>\n

The grapes are harvested by hand in boxes in the first ten days of November, then transported to the wine cellar where they are carefully selected. Fermentation takes place in steel tanks in contact with the peels for 15\/20 days at a controlled temperature between 20\u00b0 and 24\u00b0. Subsequently it spends a period of maturation of 12 months in steel and from 12 to 18 months in French oak tonneaux. Finally, the refinement in the bottle takes place for at least 12 months. The result is a wine with great structure and captivating aromatic complexity, destined to tell its story over time.<\/p>\n

The intense and specific characteristics of this wine are elegantly combined with main dishes like red meat, game and well-aged cheeses. It is recommended to taste it in a ballon glass at a service temperature of 18\u00b0C \u200b\u200bafter resting in the decanter for at least an hour.<\/p>\n
