Taurasi Riserva DOCG “Sensi”: why we like it
“Sensi” is the highest and most exemplary expression of the Aglianico vine, which reveals itself in all its beauty and versatility. This red wine is obtained from a scrupulous selection of pure Aglianico grapes from vineyards located in the municipality of Castelvetere sul Calore, particularly suited to the production of Taurasi Riserva DOCG, at an altitude of 400 meters above sea level, and characterized by a clayey-limestone soil typology. It is a 35 years’ vineyard of 4000 meters of extension, cultivated with a density of 2500/3000 vines per hectare and a production of 50 quintals per hectare.
The grapes are harvested by hand in baskets between the middle and the end of November, then transported to the winery where they are carefully selected. The fermentation phase takes place in 10 hectoliter steel tanks. Subsequently it spends a maturation period of more than 24 months in 225 liter French oak barriques. Finally, the refinement process takes place in the bottle for at least 5 months. The result is a wine with great structure and captivating aromatic complexity, destined to tell its story over time.
The intense and specific characteristics of this wine are elegantly combined with main dishes like red meat, game and well-aged cheeses. A service temperature of 18°/20°C is recommended after resting in the decanter for at least one hour.
