Greco di Tufo DOCG “Nestor”: why we like it
The vineyards are located on the hills of S. Paolina, Montefusco and Prata Principato Ultra in the heart of the Greco di Tufo designation, at an altitude ranging from 400 to 700 meters above sea level. The type of soil is mainly tufaceous and clayey with volcanic and calcareous stripes.
The grapes are harvested by hand and, after a selection in the cellar, whole pressed. the “free-run must” is cold clarified and the fermentation process is carried out at a low temperature, in order to preserve the fruity aromas of the grapes. After fermentation, the wine refines on its own fine lees and then in the bottle.
Suitable for matching well-structured dishes from appetizers to main courses, in addition to fish-based recipes, it can be paired with vegetable soups, pasta and beans, white meats and not too aged cheeses. Service temperature of l0°- l2° C.
